Course Outline:

 

   A brief review of current legislation
   Bacteria & illness
   High risk foods – prevention of food contamination
   Contamination and prevention measures
   Preparing and presenting food
   Spoilage and preservation
   Personal hygiene
   Pest control
   HACCP Assessment

Course book and a comprehensive delegate pack will be provided.

Learning Outcomes:

 

At the end of the course, delegates will have an understanding of the following:
   Basic legislation
   Bacteria – how they multiply
   High risk foods and contamination
   Premises and equipment
   HACCP Assessment
   Food safety control

Assessment:

 

The course is of 6 hours duration and conducted during one day. It is followed by a short multiple choice test, which can be conducted verbally if required. All successful candidates will receive the nationally recognised Foundation Certificate in Food Hygiene NVQ Level 1 equivalent.
